Traditional detection methods for determining moisture content and water-holding capacity in cooked pork sausages are destructive and time consuming. Typically they require skilled personal and are not suited for on-line detection. A new study demonstrates how the VideometerLab can be used to acquire a non-destructive and fast measurement suitable for on-line applications.
